With 80 recipes, tons of full-color photos, and interesting stories about what inspires the chefs, Horizons: New Vegan Cuisine is the next best thing to actually eating at the restaurant.

The influence of cuisines from all over the world is evident throughout the book: Jamaican tomato & Red Bean Bisque, Mexican Baba Ghanoush, Vietnamese Bruschetta, Greek Salad, Cuban Paella....

There's also a very useful section called "In the Kitchen" which goes over terminology, cooking techniques, and ingredients, particularly herbs and spices.
