A mix of Israeli couscous, lentils, bell peppers, dates, and mint makes a subtle, refreshing salad.
Serve these bell peppers stuffed with tomatoes, carrots, mushrooms, and couscous alongside a green salad for a simple, filling meal.
Couscous is a grain made of semolina commonly eaten in North Africa with vegetables and meat, fish, and/or poultry. This vegetarian version, simple vegetable couscous, is less common, but no less delicious.
