In my experience, eggplant is something you either love or you hate. Its texture is rather meaty and its flavor quite distinctive. If you love eggplant (or aubergine, as the British – and French – call it) like I do, enjoy more of it with these recipes.

Bharta is a smoked eggplant dish popular in the villages of Punjab. It is usually served with greens, bread, and lassi.
This eggplant appetizer from southern Italy can be eaten as a side dish or on top of bread.
Most mock meatballs are made mostly of tofu or tempeh, but this unique recipe uses eggplant and walnuts to great effect. And before you serve them with something like catsup, try one plain – you’ll be amazed at the depth of flavor.
A lovely, thick eggplant dip. Great with crackers, French bread, pita bread, or crudites.
Eggplant layered with tomato sauce and topped with saffron custard makes an elegant and delicious main course.
Eggplant parmigiana, also called eggplant parmesan, is a perfect main course served alongside/atop plain pasta.
