Vegetarian recipes and info
Whether fresh or dried, herbs can turn a simple dish into an outstanding one, and add variety to tried and true recipes. Here are my favorite vegetarian recipes featuring herbs.
Cultured almond paste makes a terrific vegan alternative to fresh chèvre, the soft, spreadable goat cheese often sold in herb- or spice-covered logs.
Tangy vegan cheese that can be cut into soft cubes and placed on top of salad or spread on crackers.
Antipasto, which means “before food” in Italian, is a salad-like appetizer consisting of various fresh and pickled vegetables, cheeses, and rolled or sliced meats. For vegetarian antipasto, you can either substitute mock meat products or leave them out altogether.
Baked ricotta cheese with herbs makes a savory, slightly spongy cake – a very simple yet delicious appetizer.
This barley soup recipe from Sicily is a perfect vegan alternative to chicken soup when you’re feeling under the weather.
When you eat basil, don’t throw those leafless stems away – use them to make a delicious basil-infused oil that tastes like summer.
White beans and black olives combine with various herbs and veggies to make a hearty soup.
Beet borscht is a traditional cold vegetarian soup common in Russian, Ukrainian, and Jewish cooking.
Light and crunchy slices of eggplant and zucchini make a wonderful summer dish.
