If it weren’t for pasta, I probably wouldn’t survive as a vegetarian. Not only is pasta versatile, it’s also healthy and delicious. Check out this index of vegetarian pasta dishes, lasagnas, and sauces.
A rich and creamy Italian sauce, usually served over fettucine. It’s also delectable in spinach lasagna and with ravioli.
This hearty dish is made with pasta and grilled vegetables and topped with melted cheese.
Kosherie is an Egyptian dish of spicy lentils, rice, pasta, and fried onions. You have to cook each of these elements simultaneously, but each one is fairly simple.
Lasagna is basically a casserole made with layers of flat noodles, vegetables, cheese, and sometimes meat. There are a million variations on lasagna; here are some vegetarian favorites.
(Lasagna or lasagne? I never know how to spell it.) In any case, vegetable lasagne is easy and delicious. Here’s a variation on the classic red sauce version of vegetarian lasagne, with some extra vegetables.
Spinach lasagna, sometimes called lasagne Florentine, is a classic vegetarian dish made with a creamy white sauce, cheese, and vegetables.
Macaroni and cheese is one of those dishes that sound boring, but can be just as delicious as a fancier pasta dish like lasagne or pesto.
