Rice is an inexpensive and versatile food, but I always seem to eat it in the same ways. Here’s a collection of recipes that are either made with rice or complement it nicely.
Sweet, tart, and slightly crunchy, these apple burgers might sound weird, but they definitely taste good.
I used to hate making rice, until I realized that the world won’t end if I ignore conventional wisdom. It’s ok to remove the lid to stir during cooking and to add more water, and it doesn’t even matter if there’s liquid left at the end. As when cooking pasta, you can just drain whatever’s left when the rice is ready.
Normally filled with a mixture of ground beef and rice, cabbage rolls are a staple in Eastern Europe and a favorite in many other countries. Try these vegetarian cabbage rolls stuffed with rice and vegetables for an equally tasty main course.
Rice pilaf enhanced with golden potatoes, for when you just can’t decide between your two favorite starches.
Simply cooking rice in coconut milk instead of water adds a whole new dimension of flavor. Since coconut is a tropical fruit, coconut rice is traditional to southern Indian, southeast Asian, and Latin American cuisines.
This interesting, lemony soup is traditional in Greek cuisine. Serve with Greek salad, hummus, and spanakopita for a veggie Greek meal.
Fried rice is an easy, versatile, and quick vegetarian recipe. In fact, the hardest part is remembering to make the rice at least several hours beforehand, so that it has time to chill.
Gallo pinto, literally “spotted rooster,” is ubiquitous in Costa Rica and Nicaragua. It refers to black beans and rice cooked together, and is served at every meal, surrounded by various side dishes. It’s easy to make and very healthy.
