Seitan is a vegetarian meat replacement made by extracting the gluten from flour. It is an excellent source of protein and very versatile.
Basic recipe for seitan. Feel free to experiment by adding herbs and spices to the dough.
I was never a huge fan of Chinese food, but one dish I did like was cashew chicken. With some tinkering, I came up with a quick and easy seitan version.
A moist, tender seitan that makes a perfect chicken substitute in just about any recipe.
Deliciously crunchy with just the right amount of spice, like mustardy chicken nuggets.
Everyone seems to love “build it yourself” meals, and fajitas are a delicous way to do this. Hot fillings and cold toppings are served with tortillas so that you can mix and match your own fajitas.
Tender seitan with a crisp, nutty crust: so delicious you’ll feel like saving it for special occasions, but quick and easy enough for any day of the week.
Although time-consuming, this is an easy and very delicious recipe for mock beef bourguignon made with seitan, tempeh, or mock ground beef.
I just love this recipe: pasta smothered in a creamy sauce with mushrooms and chunks of mock meat.
Mock chicken chow mein (made with seitan) doesn’t take long to prepare, but it does require quite a bit of cooking.
