Flaxseed

Glossary of
Vegetarianism and
Vegetarian Cuisine

(noun)  Small, reddish-brown seeds from the flax plant which can be eaten raw or pressed into oil. Excellent vegetarian source of lignans, fiber, and omega-3 fatty acids.

Flaxseeds and flaxseed oil should be stored in the refrigerator and eaten raw, as high heat destroys the nutrients (do not fry, but baking is ok).
