Mock Feta Cheese

Here is a delicious vegan substitute for feta cheese.

Yield 1½ cups
Time 1 hour (mostly to marinate)
Tools
  • bowl
  • whisk
  • wooden spoon
Ingredients
  • ¼ c olive oil
  • ¼ c water
  • ½ c red wine vinegar
  • 2 t salt
  • 1 T dried basil
  • ½ t dried oregano
  • ½ t pepper
  • 1 pound firm tofu
Directions Place everything but the tofu in the bowl and whisk together. Add tofu, stir, and let sit for at least an hour.
Notes This is wonderful on top of Greek salad.
