Tofu Feta

Here is a delicious vegan substitute for feta cheese.

Yield: one pound

Time: 5 minutes, plus time to marinate

Tools

  • knife
  • bowl
  • whisk
  • wooden spoon

Ingredients

  • 1 pound firm or extra-firm tofu, pressed
  • 3 T lemon juice
  • 2 T olive oil
  • 1 T cider vinegar
  • 1 T olive brine
  • 2 t miso
  • 1 t salt
  • 1 t dried oregano

Directions

Cut the tofu into cubes.

Place everything else in the bowl and whisk together.

Add tofu, stir, and let sit for at least an hour, stirring occasionally.

Store leftover tofu feta in the fridge. It will keep for several days.

Notes

Tofu feta is wonderful on top of Greek salad and makes a great addition to an antipasto platter.
