Bran Muffins

Here is a simple recipe for bran muffins – a delicious and very healthy breakfast item.

Yield 10-12 muffins
Time 30 minutes

  • muffin pans
  • large bowl
  • whisk
  • medium bowl
  • sifter
  • small bowl
  • wooden spoon
Ingredients
  • 2 T butter
  • 1/3 c vegetable oil
  • 1 egg, beaten
  • 4 T dark brown sugar
  • 1/3 c molasses
  • 1½ c white flour
  • 1 c wheat or oat bran
  • 1 t baking soda
  • 1 t baking powder
  • 1 t cinnamon
  • ½ t salt
  • ¾ c yogurt
  • ½ c milk
  • 1 c raisins and/or chopped nuts
Directions Grease the muffin tins and set aside. Preheat oven to 400.

Combine oil, egg, sugar, and molasses in the large bowl, and set aside.

Sift flour, bran, baking soda and powder, cinnamon, and salt together into the medium bowl.

Combine yogurt and milk in the small bowl.

Alternate between adding the yogurt/milk and the dry ingredients to the large bowl. Mix only until combined; batter will be lumpy. Stir in raisins/nuts.

Fill each muffin tin about 2/3 full and bake for 15-20 minutes.

  • Thanks Laura! These are very popular, never fail, very moist muffins. Hope your readers enjoy them too. There’s been a muffin-o-thon of sorts happening with the bloggers I visit, in the last few days. Probably a quick way to have fresh, delicious baking with minimal oven time (way tooooo hot for that in most areas of US and Canada).
