Although scrambled tofu doesn’t taste quite the same as scrambled eggs, it’s easy to make and can take any of the additions and toppings on my omelette ideas page.

- small frying pan
- wooden spoon
Ingredients
- 2 T vegetable or olive oil
- 10 oz silken tofu, crumbled or firm tofu, pressed and puréed
- ¼ t turmeric or curry powder
- ¼ t salt
Directions
Heat the oil and over high heat.
Add tofu and seasonings and cook, stirring frequently, until firm and hot, 3-5 minutes. If you’re using firm tofu, you might want to add a couple T of water to get the right texture.
Stir in additions and/or top with toppings and serve.
Notes
If you’re adding onions, garlic, or mushrooms, you should sauté them in the oil before adding the tofu.
