Try this easy recipe for vegan chocolate pudding.
Yield: about 2 cups
Time: 1½ hours

- heavy saucepan
- whisk
- plastic wrap
Ingredients
- ⅓ c sugar
- 2 T cornstarch
- 4 t cocoa
- dash salt
- 2 c soy milk
- 1 t vanilla
Directions
Mix dry ingredients, then begin gradually adding the soy milk, whisking constantly, until lumps are gone. Stir in the rest of the milk.
Cook over medium heat, whisking constantly, until pudding thickens and boils.
Add vanilla and remove from heat.
Let sit for 10 minutes, stirring occasionally.
Place plastic wrap directly on the surface of the pudding, and chill until set.
Notes
If you’re a real chocoholic, try stirring in ½ c of dark chocolate chips along with the vanilla. Yum!
