I’m not a big fan of carbonated beverages, but once in a while I do like ginger ale, especially when I have an upset stomach. Homemade ginger ale is easy to make and much more "gingery" than anything you can buy at the store.

| Directions |
Grind ginger in food processor, place in saucepan with sugar and regular water, and bring to a boil. Lower heat and let simmer for an hour. Remove from heat, let cool, and strain.
Combine ginger syrup with sparkling water and serve. To make individual servings, use ¼ c syrup plus 1 c water. |
| Notes | Keep unused syrup refrigerated in tightly covered container for up to 2 months.
To make ginger tea, combine 3-4 T of syrup with 1 c boiling water.
