BLT

Warm "bacon" contrasts nicely with crisp lettuce and ripe tomato, and makes a delicious, nutritious vegan sandwich. Vegan bacon, lettuce, tomato
Yield 1 sandwich
Time 5 minutes

  • medium frying pan
  • tongs
  • knife
Ingredients
  • 2 slices bread (preferably whole grain)
  • 1-2 t oil
  • 3-4 slices vegan bacon*
  • mayonnaise  or  aïoli
  • 2 leaves of lettuce (or more, depending on size)
  • 2-3 slices tomato
Directions Optional: toast bread.

Heat oil over medium heat, add bacon, and fry until golden and crisp. Turn and fry other side.

Meanwhile, spread mayonnaise on one slice of bread/toast.

Arrange lettuc, tomato, and bacon, cutting to fit, if necessary.

Top with other slice of bread, cut in half, and serve immediately.

Notes

* Whenever possible, I make my own tofu bacon. My favorite storebought is "Fakin’ Bacon" from Lightlife, which is made from organic tempeh marinated in a slight smoky sauce. In a pinch, I use thinly sliced smoked tofu (shown).

This simple sandwich is packed with good nutrition: whole grain, vegetables, and excellent vegetarian protein.

I often add a bit of red onion and avocado for a more substantial sandwich.
