The best vegan cookbooks that I've found.

Vegan With a Vengeance
by Isa Chandra Moskowitz

Don't let the title put you off - this is a terrific collection of vegan recipes that are, for the most part, both easy and delicious. The language can be rather informal, but that's half the fun. I especially like the selection of brunch recipes.

The author is the creator of The Post Punk Kitchen (a vegetarian cooking show on public access television).


Becoming Vegan: The Complete Guide to Adopting a Healthy Plant-Based Diet
by Melina Vesanto, R.D.

Whether you've thought about becoming a vegan or have already taken the plunge, this book is an excellent addition to your vegetarian library. It explains the theories behind veganism, the health and environmental benefits, and how to survive in a non-vegan world, and also includes detailed information about veganism in relation to a person's weight, age, and physical state (i.e., sick, pregnant, breast-feeding, etc).


The Mediterranean Vegan Kitchen
by Donna Klein

This book is like a culinary tour of the Mediterranean. What I love about it is that the author did not take hundreds of recipes that traditionally require meat, dairy, or eggs and convert them (e.g., take Bolognaise sauce and subtract the meat), but instead searched out more than 300 existing vegetarian dishes from the Mediterranean. Some notable recipes: Minestrone Soup, Baked Black Olives with Herbes de Provence and Anise, and Moroccan Couscous with Seven-Vegetable Tagine.


The Voluptuous Vegan
by Myra Kornfeld

Voluptuous is no exaggeration: this book includes more than 200 mouth-watering recipes that even meat-lovers will love. The author is an absolute pro when it comes to herbs and spices; you won't find a single bland dish in this entire book. Must-try recipes include four flavors of Vegan Sour Cream, Peanut Butter Mousse Cake, Fresh Tomato Sauce, Smoky Chestnut and Sweet Potato Soup, and Shepherd's Pie.
