vol I, no 1 - 20 February 2002

Hello and welcome to the first issue of the Veggie Table Newsletter! I'm so happy that inspiration struck and convinced me to create this new site, allowing me to share me love of vegetarian cooking and food with you. I hope that in addition to enjoying the recipes and articles I add weekly, you'll become part of the Veggie Table community by chatting and sharing your favorite recipes in the forum.

(My apologies for the lateness of this newsletter. I tried to send it last week and discovered that my email server wasn't working. Technical Support has completely ignored me, so I've had to switch us over to a new server. This new service insists that everyone confirm their subscription, so that is why you all received a second confirmation email. If you're reading this, you obviously confirmed, so we're all set. Hopefully this new service will keep us going for a few weeks, at least. ;-)

French Recipes
I am very keen on finding veggie versions of French recipes. I love to cook with wine and herbs. French cuisine is meat heavy and has a lot of organ meats (yuck!) but the essence of how the flavors are achieved probably can be duplicated without any meat. Do you know any veggie French recipes? Please share them on the forum:

Eating for immunity
There are so many claims made for certain foods and good health! We are told to avoid animal fats, full fat diary products, cured meat etc. I would like to discuss “Scientific Research” for healthy eating, to learn which food substances are proven to be beneficial, and equally those which can be proven to be harmful. Are we what we eat? Alternative to Cod Liver Oil?
There has been a huge amount of publicity in the UK recently about a new scientific report which shows definitely that eating cod liver oil can help prevent joint problems worsening. I cannot bring myself to eat cod liver oil as the stocks of cod are being fished to extinction as it is, however I'd love to have the benefits of the oil. There must be a veggie alternative - does anyone know what it is?
