This is a very broad category of cuisines, for the moment encompassing North
Africa as well as Israel and Lebanon. As I add more recipes, I'll break this

Glossary of Vegetarianism and Vegetarian Cuisine
I've just added a number of new terms to my vegetarian glossary to help you find
the foods that meet your personal dietary standards. If you are vegan, you'll
definitely want to read the entries on soymilk and soy cheese, as they may
contain an animal ingredient. Other new entries include kosher, pareve, and
rennet.

Kosher doesn't mean vegetarian
Some people insist again and again that if something is labeled Kosher or Kosher Dairy that it is vegetarian. I have debated with them that Kosher law does not consider fish to be meat and Kosher Dairy means there is no meat but there is still the possibility of
fish.... I'm getting nowhere.
