Recipe:
Bean Salad with Walnuts and Feta
When you cook your own beans, they are one of the healthiest things out
there, and they are delicious with just a pinch of salt. They are also wonderful
paired with feta and toasted walnuts, as in this simple bean salad.

- baking dish
- 2 salad bowls or plates

| Ingredients |
- ¼ c walnut pieces
- 1 c beans,* soaked and cooked
or canned and rinsed (they can be cold or at room temperature)
- 2-3 T red onion, minced
- ½ avocado, diced
- ¼ c feta cheese, crumbled
- 2 T olive oil
- 2 t balsamic vinegar

| Directions |
Place walnuts on baking dish, and bake or toast for 5-10 minutes,
until just golden. (They can burn very quickly, so keep your eye on them.)
Meanwhile, arrange half of the beans on each plate, then sprinkle
with onion, avocado, and feta cheese. Drizzle with olive oil and vinegar,
top with walnuts, and serve.

| Notes |
*This salad is perfect with black beans, red beans, or lentils, but it's
a little bland with white beans. I imagine it would also be good with other
beans - experiment with different kinds to see what you like best. Also try
