Vegetarian Brunch Menu
Brunch can seem tricky to pull off, as it's a combination of breakfast and
lunch. In fact, it's the easiest thing in the world - just be sure to combine a
bit of both meals, with an emphasis on things that are easy to prepare and easy
to serve. For example, I avoid soup at my brunches,
since it requires an extra dish.
Main Dishes
Baked Omelette
I whipped up this
simple recipe last week and in doing so discovered an easy, elegant way to feed eggs
to several people at once.
Breakfast Burrito
There's no set recipe for breakfast burritos - you can stuff them with pretty
much anything you like. This recipe is for a basic breakfast burrito that you
can customize to suit your own tastes.
Cheese Blintzes
Although I've seen menus with various kinds of fruit blintzes listed, for me
cheese blintzes are the only option. The creamy cheese filling complements the
warm crêpe so nicely, I can't imagine filling it with anything else.
Crêpes
Crêpes are thin pancakes that can be wrapped around just about anything to
turn it into an elegant meal, or just folded and topped with something yummy.
Try some of these fillings and toppings, or experiment to invent your own.
Fajitas
Everyone seems to love "build it yourself" meals, and fajitas are a
delicous way to do this. Hot fillings and cold toppings are served with
tortillas so that you can mix and match your own fajitas.
French Toast
This is the recipe for the best French toast I've ever had - a variation on
the house recipe at a little café I used to work at in Illinois. I hope you
enjoy it!
Macaroni and Cheese
Macaroni and cheese is one of those dishes that sound boring, but can be just as
delicious as a "fancier" pasta dish like lasagne or pesto.
Mashed Potatoes
Mashed potatoes are the ultimate comfort food. They're quick and easy and the
soft texture makes me feel like a kid. They're also a great base for all kinds
of variations like vegan mashed potatoes and garlic mashed potatoes.
Mushroom Strudel
Working with filo dough is not as difficult as you might think, and this elegant
mushroom dish is well worth the effort.
Oatmeal
Oatmeal is one of the great breakfasts - not only is it packed with nutrients,
it's also easy to cook and can be customized to your heart's content.

Omelette Omelettes (or omelets) are quick, easy, and very versatile. They're great at any time of the day, especially breakfast or brunch. Following these instructions to the letter will leave you with a very light, fluffy omelette that will melt in your mouth. Paella A Spanish dish traditionally made with meat and shellfish. This flexible veggie version is simpler, but no less delicious. Pancakes and Waffles Pancakes are, for me, the ideal breakfast. Potato Pancakes / Latkes
Potato pancakes, or latkes, are a Jewish dish traditionally served at
Hanukkah. Whether you're Jewish or not, crispy potato pancakes are delicious at
breakfast and brunch. Scrambled Tofu
Although scrambled tofu doesn't taste quite like scrambled eggs, it's easy to make and can take any of the additions and toppings you'd would put in an omelette.

Spanish Tortilla
This potato omelette is a traditional Spanish tapa, or appetizer, but
it's equally good for breakfast or brunch.
Vegan Coffee Cake
Not only is

can make it Saturday night and then wake up to vegan coffee cake for brunch.

Caprese
This tomato-mozzarella-basil dish is my favorite starter; even though I make it myself
regularly, I always order it when I eat out.
Fruit Salad
There's nothing like a bowl of fresh, sweet fruit salad in the summer. No one
really needs a recipe for fruit salad, but here are some ideas to get you
started..
Herb Salad - Sabzi
If you grow your own herbs, this healthy salad is a great way to enjoy them...
or show them off.
Israeli Salad A mixture of finely diced vegetables served with a tart dressing.
Lentil Salad Like all beans and legumes, lentils are an excellent source of protein. Unlike the others, lentils do not need to be soaked before cooking. For an easy, healthy, quick meal, try this lentil salad recipe with onions and rosemary.
Mock Chicken Salad
This simple tempeh salad really does resemble chicken salad. It's great in
sandwiches or atop a green salad.
Potato Salad
This sort of "everything but the kitchen sink" potato salad is perfect
for a picnic or buffet.
Breads
Apricot-Nut Bread
This is a lovely, slightly sweet bread - great for breakfast or dessert.
Banana Bread
A good way to use up overripe bananas and great as breakfast or a snack.
Bran Muffins
Here is a simple recipe for bran muffins - a delicious and very healthy breakfast item.

I find that the nicest meals are always nicer with some bread in my hand,
preferably warm from the oven. We don't have a nice bakery nearby, so I have to
make my own rolls, and this is the simplest recipe I've found.

Sides and Garnishes
Berry Sauce
This sweet-tart sauce is wonderful on pancakes, French
toast, and ice cream.
Cheesy Grits
Whether you serve them straight up or fried, cheesy grits make a great addition to breakfast
or brunch.
Crudités
A platter of crudités typically consists one or more types of raw vegetables served with one or more dips. These can be served as an appetizer, at a buffet, in place of a salad - the sky is the limit. Here
are some ideas for interesting crudité platters, and don't forget a selection
of dips.
Deviled Eggs
Aside from being a nice way to use up leftover hard-boiled eggs, deviled eggs
are easy to make, convenient to eat, and tasty to boot.
Home Fries Home fries take a bit of time, but they make a great addition to breakfast or brunch.
Pâté
If you miss the taste of chopped liver, give this vegetarian pâté a try. You
might even be able to fool your non-veggie friends.

This is a delicious, protein-packed, vegetarian breakfast side dish.
