Recipe: Cole Slaw
Cole slaw, a perfect summer picnic salad, is traditionally made with
mayonnaise. This cole slaw recipe includes several dressing variations.

- large bowl
- lid or plastic wrap
- two wooden spoons

| Ingredients |
- 4 c red and/or green cabbage, shredded
- 1 bell pepper, finely chopped
- 1 carrot, finely chopped or shredded
- ¼ c white and/or green onion, minced
- ¼-½ c fresh herbs (parsley, dill, and/or cilantro)
- ¾-1 c dressing*
- salt and pepper

| Directions |
Combine the vegetables and herbs, then toss with the dressing. Taste the cole slaw and add more dressing and salt/pepper if needed.
Cover and refrigerate for at least one hour before serving.
