| Vegetarian Recipes with Eggs
If you're a vegan, you should skip this page. But if you, like
me, are an ovo-lacto vegetarian who loves the convenience and
versatility of eggs, you are sure to find some inspiration (and good
food!) in these dishes made with eggs.
Baked Omelette
I whipped up this
simple recipe and in doing so discovered an easy, elegant way to feed eggs
to several people at once.
Breakfast Burrito
There's no set recipe for breakfast burritos - you can stuff them with pretty
much anything you like. This recipe is for a basic breakfast burrito that you
can customize to suit your own tastes.
Carrot-Onion Quiche
A quiche makes an easy, satisfying main course. This colorful
carrot-onion quiche looks and tastes great with a side of dark green
vegetables or salad.
Deviled Eggs
Aside from being a nice way to use up leftover hard-boiled eggs, deviled eggs
are easy to make, convenient to eat, and tasty to boot.

Omelette Omelettes (or omelets) are quick, easy, and very versatile. They're great at any time of the day, especially breakfast or brunch. Following these instructions to the letter will leave you with a very light, fluffy omelette that will melt in your mouth.

I think potato salad should be called "potato egg salad," because
the hard-boiled eggs are essential. This sort of "everything but the kitchen sink" potato salad is perfect
for a picnic or buffet.

This potato omelette is a traditional Spanish tapa, or appetizer, but
it's equally good for breakfast or brunch.

Peas and saffron really spice up a traditional Spanish tortilla (potato
omelette).
Spicy Tomato Cream Sauce This spicy tomato cream sauce is an Indian recipe that goes wonderfully with hard-boiled eggs and warm bread (such as naan, pita, or French bread).
