Recipe: Hearts of Palm Dip
This creamy dip made with hearts of palm and green onion will remind you of sour cream and onion potato chips.

| Ingredients |
- 8 oz hearts of palm, drained
- 1 c green onion
- 4 oz cream cheese
- ½ c asiago or parmesan cheese, grated*
- ¾ c sour cream
- ¾ c mayonnaise

| Directions |
Chop the hearts of palm and green onion a bit in the food
processor, then add remaining ingredients. Make sure the lid is on tightly
and process until smooth. Serve chilled, with bread, crackers, or
potato chips.

| Notes |
*If you don't grate the cheese before adding it to the food processor,
the chunks can get caught on the blade and then cause the dip to "explode"
all over the place,
so a tightly-fitting lid is essential.
Hearts of palm dip will last a week or more in the fridge. |
