vegetarian Vegetarian Olive Recipes

Olives are good on their own, but they're even better on pizza and in salads. If you like olives, you'll love these recipes with olives.

Antipasto
Antipasto, which means "before food" in Italian, is a salad-like appetizer consisting of various fresh and pickled vegetables, cheeses, and rolled or sliced meats. For vegetarian antipasto, you can either subsitute mock meat products or leave them out altogether.

Asparagus Salad
Asparagus, olives, mint, bell pepper, and onion - a nice mix for a summer salad.

Bean and Olive Soup
White beans and black olives combine with various herbs and veggies to make a hearty soup.

Caponata - Sweet and Sour Eggplant
This eggplant appetizer from southern Italy can be eaten as a side dish or on top of bread.

Cheese Plate
Cheese plates can be simple or elaborate, with dozens of different cheeses or just a few. There's no one right way to make a cheese plate, but these guidelines can help you put together a cheese plate you and your friends will never forget.

Dolmades - Stuffed Grape Leaves
When I think of Greek food, dolmades is one of the first thing that comes to mind, followed by the fact that these grape leaves are stuffed with meat. Fortunately, a vegetarian version of stuffed grape leaves is easy and tasty.

Greek Salad
Kalamata olives and feta cheese really spice up this otherwise simple salad.

Hummus - Chick Pea Dip
An Eastern Mediterranean dip, very common in Greece and Lebanon as well as a number of other countries. A heavenly blend of chick peas, garlic...

Jambalaya
This traditional stew from New Orleans is meat-based, but this vegetarian version leaves nothing to be desired.

Mixed Salad
There are probably millions of salad possibilities, even for what you might think of as a simple mixed salad. Here are some typical ingredients and a few popular variations.

Omelette
Omelettes (or omelets) are quick, easy, and very versatile. They're great at any time of the day, especially breakfast or brunch. Following these instructions to the letter will leave you with a very light, fluffy omelette that will melt in your mouth.

Orange Salad
Both versions of this easy-to-prepare salad are wonderfully refreshing in the summertime.

Panzanella
Panzanella is a bread and vegetable salad from Tuscany. It's a pretty flexible recipe, as long as you have the two most important ingredients: very ripe tomatoes and day-old, good country bread.

Pizza
Making homemade pizza is one of the best and most creative ways of proving that meat is not a necessary part of a human's diet. Also see my pages on pizza dough and toppings.

Salade niçoise
Chickpeas or tofu can be used in place of the traditional tuna fish or anchovies for this vegetarian salade niçoise recipe.

Tapenade - Olive Dip
A typical Mediterranean dip, made mostly of olives and olive oil. Traditional recipes include anchovies, but there is absolutely no need for them here.

Veggie Sandwich
Whether you're on the run or just don't feel like cooking something, a vegetarian sandwich is just the thing: quick, easy, and as healthy as you care to make it.
