vegetarianRecipe: Zucchini Fritters

These breaded and pan-fried fritters are delicious hot or cold. Try them with a bit of your favorite sauce or dip.

Yield 4 servings
Time 45 minutes
Tools
  • Grater
  • Kitchen towel
  • Large saucepan
  • Wooden spoon
  • Large bowl
Ingredients
  • 2 medium zucchinis, grated
  • 1 medium onion, diced
  • 2 T olive oil
  • 3 cloves garlic, minced
  • 2 eggs
  • ½ c flour or fine bread crumbs
  • salt
  • pepper
Directions Squeeze the extra liquid out of the grated zucchini by wrapping in the towel and squeezing.

Heat 1 T oil, add zucchini and onion, and fry for about 5 minutes. Add the garlic and continue frying until liquid is gone. Transfer to bowl.

Mix in eggs, flour, and spices.

Heat the other T of oil, drop in small "pancakes" of the zucchini mixture, and fry until golden brown, about 7 minutes. Turn and fry another 4-5 minutes.

Notes You can spice these fritters up a bit with cheese (e.g., feta), interesting spices (paprika, cayenne pepper, dill), or minced hot peppers.
