Vegetarian recipes Zucchini Recipes

Zucchini grows like a weed in our garden, and I find it difficult to eat it all without getting bored. Sound familiar? Here are some tasty ways to use up fresh zucchini.

Bean and Olive Soup
White beans and black olives combine with various herbs and veggies to make a hearty soup.

Couscous
Couscous is a grain made of semolina commonly eaten in North Africa with vegetables and meat, fish, and/or poultry. This vegetarian version, simple vegetable couscous, is less common, but no less delicious.

Cream of Zucchini Soup
A simple soup that can be served hot or cold.

Eggplant Zucchini Gratin
Layers of eggplant and zucchini with tomato sauce and custard make a delightful first or main course.

Kiss the Cook Tomato Sauce
This easy tomato sauce is great over vegetables, pasta, or pizza.

Lasagne
Vegetarian lasagne is easy and delicious. Here's a variation on the classic red sauce version, with some extra vegetables.

Leek, Zucchini, Fennel Soup
Three very different vegetables combine to make a flavorful soup.

Minestrone Soup
This classic Italian soup is always vegan, as long as you leave off the parmesan cheese.

Moussaka
Moussaka is a Greek dish traditionally made with lamb or beef. This vegetarian / vegan moussaka recipe uses portobello mushrooms and seitan instead. A rich and delicious main course.

Pizza
Making homemade pizza is one of the best and most creative ways of proving that meat is not a necessary part of a human's diet. Also see my pages on pizza dough and toppings.

Pot Pie
This pot pie recipe is better than the TV dinner version for two reasons: it's vegetarian and it's prepared and baked, rather than frozen and microwaved. It's also quick and flexible, so give it a try.

Potato Zucchini Soup
An easy, incredibly flavorful soup that tastes best just barely warm.

Ratatouille
The perfect recipe to enjoy fresh summer vegetables and herbs; it can be served half a dozen different ways.

Roasted Vegetables
Roasting vegetables brings out all kinds of flavor and depth. This recipe is just a guide - feel free to add/subtract/substitute any of the vegetables.

Roasted Vegetable Stew
Roasting brings out all the rich flavor and sweetness of veggies.

Roasted Veggie Sandwich
A roasted veggie sandwich may sound simple (i.e., boring), but since roasting vegetables brings out so much flavor, even non-vegetarians will be delighted.

Seitan Teriyaki
A mix of seasoned, roasted vegetables and seitan. Serve it with rice or noodles for a delicious vegan meal.

Shepherd's Pie
This vegetarian shepherd's pie recipe is a simple yet delicious lambless version of the real thing.

Spanish Tortilla with Zucchini
An amazing, melt-in-your-mouth potato and zucchini omelette. It does take a long time to prepare, but it tastes best at room temperature, so it's great for parties since you can make it the day before.

Stacked Tortillas
This is a quick and interesting way to eat some good veggies.

Stir-Fry
If you're looking for an easy way to make up a healthy meal out of leftover vegetables, a vegetarian stir-fry is the way to go.

Vegetable Curry
Curry is one of those dishes that can be made with just about any combination of vegetables - use this vegetable curry recipe as a guide.

Vegetable Salad
This salad is colorful, tasty, and a good way to use up some leftover vegetables.

Vegetable Soup
Vegetable soup is one of those things that don't really need a recipe - you can customize the ingredients to your heart's content. This recipe is really just a set of guidelines to give you some ideas about what to include.

Zucchini Black Bean Quesadillas
Black beans, zucchini, and a bit of cheese folded into tortillas - this may be the best quesadilla you've ever tasted.

Zucchini Chocolate Cake
I have no idea why zucchini and chocolate go well together, but they do, especially in this easy cake.

Zucchini Fritters
These breaded and pan-fried fritters are delicious hot or cold. Try them with a bit of your favorite sauce or dip.

Zucchini Lasagna
If you love the layers of lasagna but are on a wheat-free diet, this zucchini lasagna recipe is just what you're looking for.

Zucchini Parmigiana
One of the most delicious ways to use zucchini that I've ever found, and it's quick and easy too! This dish is perfect for parties and pot lucks, because you can make it the day before and it tastes great whether hot or at room temperature.

Zucchini Pecan Pancakes
Far more than the sum of their parts, these baked zucchini pecan pancakes are easy to make and taste great at any temperature, making them ideal for picnics and potlucks.

Zucchini Walnut Fritters
Delicious, with a lovely contrasting texture, these zucchini walnut fritters are great for brunch or a snack.
