Garlic has tons of flavor, is good for your heart, and supposedly makes you taste bad to bugs. What more can you ask for? Here are some of my favorite recipes to help you get more garlic into your diet.
Chicken-free version of a classic Italian entrée: lemony, garlicky, capery chickpeas served over pasta or mashed potatoes.
Garlicky black olives stirred into white beans make a flavorful salad that’s delicious at any time of year.
Creamy, vegan, garlic salad dressing or dip.
Chickpeas and red pepper coulis make a fresh and flavorful soup.
A Greek variation on garlic mashed potatoes served as a side dish or dip.
Use chickpea sprouts in place of boiled chickpeas to make raw hummus. It tastes quite a bit different than regular hummus, but it’s just delicious in its own way.
White beans and black olives combine with various herbs and veggies to make a hearty soup.
A typical Mediterranean dip, made mostly of olives and olive oil. Traditional recipes include anchovies, but there is absolutely no need for them here.
This white bean and tomato soup flavored with sage and thyme is an elegant alternative to minestrone.
