|This simple recipe makes a crunchy tofu that is very bland by itself, but great for dipping into flavorful sauces.*|
|Directions||Drain the tofu but do not pat dry. Slice cross-wise into about 8 ½-inch slices, then once length-wise, so that you end up with about 16 equal pieces.
Combine cornmeal, flour, bread crumbs, salt, and pepper, and use about half of mixture to cover plate.
Shake excess water from tofu then place on top of dry mixture and turn to coat. Sprinkle more of the dry mixture on top as needed. Set coated pieces aside.
When all of the tofu is breaded, put the pan over medium heat and pour in enough oil to coat the bottom.
Add a single layer of tofu pieces and fry until golden, about 5 minutes. Turn and cook the second side, then repeat with remaining tofu.
Sprinkle with salt and serve hot.
|Notes||If you want the tofu itself to have more flavor, you can marinate it before breading, and/or add herbs + spices to the dry mixture.
