Mock Feta Cheese
Here is a delicious vegan substitute for feta cheese.

||1 hour (mostly to marinate)
- ¼ c olive oil
- ¼ c water
- ½ c red wine vinegar
- 2 t salt
- 1 T dried basil
- ½ t dried oregano
- ½ t pepper
- 1 pound firm tofu
||Place everything but the tofu in the bowl and whisk together. Add tofu, stir, and let sit for at least an hour.
This is wonderful on top of Greek salad.
