Vegan French Toast

You might not think it’s possible to make delicious French toast without eggs – but you’d be wrong. Not only is it possible, it’s unbelievable quick and easy. But don’t take my word for it – taste it for yourself. Vegan French toast
Yield 3-8 servings*
Time 20 minutes

  • shallow bowl
  • whisk
  • large frying pan
  • spatula
Ingredients
  • 1 c non-dairy milk (I like cashew milk)
  • ¼ c chickpea flour
  • ¼ t cinnamon
  • ¼ t nutmeg
  • ½ t vanilla
  • several T vegetable oil or margarine
  • 6-12 slices of bread*
Directions Whisk together milk and flour, then whisk in spices and vanilla.

Heat a T of margarine over medium heat. When the pan is very hot but not smoking, coat both sides of a piece of bread in the batter and place in pan. Repeat with a few more slices until you have a single layer of bread in the pan.

Fry for 3-5 minutes, until golden brown. Flip and fry the other side. Transfer to a plate and add more oil as needed, then repeat until you use up all the bread.

Serve hot with maple syrup, berry sauce, jam, or fresh fruit. 

Notes *I made 12 pieces of French toast and still had nearly half of the batter left, so you might need to cut the batter recipe in half or use more bread.
