I’m not a big fan of carbonated beverages, but once in a while I do like ginger ale, especially when I have an upset stomach. Homemade ginger ale is easy to make and much more "gingery" than anything you can buy at the store.

Yield 16 servings
Time 5 minutes preparation plus 1 hour to cook and time to cool
Tools
  • food processor
  • medium saucepan
  • wooden spoon
  • fine sieve
Ingredients
  • 3 c fresh ginger, unpeeled, scrubbed, and chopped
  • 2 c sugar
  • 2 Q regular water
  • 4 Q sparkling water or seltzer
Directions Grind ginger in food processor, place in saucepan with sugar and regular water, and bring to a boil. Lower heat and let simmer for an hour. Remove from heat, let cool, and strain.

Combine ginger syrup with sparkling water and serve.

To make individual servings, use ¼ c syrup plus 1 c water.

Notes Keep unused syrup refrigerated in tightly covered container for up to 2 months.

To make ginger tea, combine 3-4 T of syrup with 1 c boiling water.
