Mix the marinade ingredients in the baking dish and add the tofu, preferably in a single layer. Swirl the dish so that the marinade coats each piece.
Every 15-20 minutes, swirl the marinade around and flip each piece of tofu so that both sides spend about equal time in the liquid.
Let marinate for at least 30 minutes, up to several hours.
Bake the tofu in the marinade at 375 for 20 minutes.
Serve with quinoa or rice drizzled with the hot marinade.
