Classic Mixed Salad
(serves 1-2)
- 4-6 leaves assorted lettuce, torn or chopped
- 1 tomato, sliced OR 10 cherry tomatoes
- 1/3 cucumber, sliced
- 1/2 carrot, sliced or grated
- 5-6 radishes, sliced
- 3-4 mushrooms, sliced
- a handful of croutons
- your favorite dressing
Protein Salad
(serves 1-2)
- 2-3 leaves Romaine, torn or chopped
- 2-3 leaves of leaf lettuce, torn or chopped
- several sprigs watercress
- 1/2 carrot, sliced
- 1/3 cucumber, sliced
- 1/4 c walnuts, chopped
- 1/4 c sunflower seeds
- 1/2 c fried tempeh
- 1/4 c parmesan cheese, grated (optional)
- 1 warm hard-boiled egg, chopped (optional)
- vinaigrette or herb dressing
Cabbage + Blue Cheese Salad
(serves 2-3)
- 1/4 head red cabbage, sliced
- 10 sprigs Italian parsley
- 1/4 c blue cheese, crumbled
- 1/3 c walnuts, chopped
