Horizons: New Vegan Cuisine is the second cookbook from Horizons, a well-known vegan restaurant in Philadelphia, Pennsyvlania. With 80 recipes, tons of full-color photos, and interesting stories about what inspires the chefs, Rich Landau & Kate Jacoby, cooking from their cookbook is the next best thing to actually eating at the restaurant.

Recipes are divided into 6 chapters:

  1. Soups – Seitan gumbo, Tomato-artichoke-pea, Trio of gazpachos…
  2. Salads – Frisee with potatoes, Arugula with creamy lemon dressing…
  3. Appetizers – Potato-olive cakes, Artichoke & white bean dip, Tortilla pizza…
  4. EntrĂ©es – Glazed seitan, Cioppino, Tofu Benedict…
  5. Sides – Caramelized cauliflower, Truffled beet slaw, Garlic green beans…
  6. Desserts & baked goods – Chocolate peanut butter bombs, Sticky toffee pudding…

The influence of cuisines from all over the world is evident throughout the book: Jamaican tomato & red bean bisque, Mexican baba ghanoush, Vietnamese bruschetta, Greek salad, Cuban paella, and lots more.
