Yield 2 servings
Time about 45 minutes
Tools
  • cookie sheet
  • bowl
  • wooden spoon
Ingredients
  • oil or cooking spray
  • 4-5 cloves garlic, minced
  • 2 t olive oil
  • 4 medium-to-large boiling potatoes, scrubbed and unpeeled
  • 2 T soy sauce
  • 2 T rice wine vinegar
  • up to 3 t Tabasco
  • black pepper
Directions Preheat oven to 375.

Very lightly oil the cookie sheet (unless it’s non-stick) and set aside.

Combine oil and garlic in the bowl.

Cut potatoes into ΒΌ-inch sticks and toss with the garlic oil. Add soy, vinegar, and Tabasco and toss again.

Spread fries into a single layer on the cookie sheet and grind pepper over them.

Bake for 10 minutes, remove from oven, and shake/stir to turn the fries over. Continue baking another 10 minutes, shake again, and return to over for another 10 minutes.

Check fries to see if they are ready – brown and slightly crispy on the ends. If not, return to oven and check every few minutes until done.
