Tools
  • Grater
  • Kitchen towel
  • Large saucepan
  • Wooden spoon
  • Large bowl
Ingredients
  • 2 medium zucchinis, grated
  • 1 medium onion, diced
  • 2 T olive oil
  • 3 cloves garlic, minced
  • 2 flax eggs (2 T ground flaxseed combined with 6 T water)
  • ½ c flour or fine bread crumbs
  • salt
  • pepper
Directions Wrap the grated zucchini in the towel and squeeze to remove excess liquid.

Heat 1 T oil, add zucchini and onion, and fry for about 5 minutes. Add the garlic and continue frying until liquid is gone. Transfer to bowl.

Stir in flax eggs, flour, and spices.

Heat the other T of oil, drop in small "pancakes" of the zucchini mixture, and fry until golden brown, about 7 minutes. Turn and fry another 4-5 minutes.

Notes You can spice these fritters up a bit with a strong cheese (e.g., feta), interesting spices (paprika, cayenne pepper, dill), or minced hot peppers.
