Home Fries

Home fries take a bit of time to bake, but they make a great addition to breakfast or brunch.
Yield 2-4 servings
Time 45 minutes
Tools
  • knife
  • medium bowl
  • wooden spoon
  • cookie sheet
  • rubber spatula
Ingredients
  • ¼ c olive oil
  • 1 t paprika
  • ½ t cumin
  • ½ t salt
  • ½ t pepper
  • 1 pound potatoes (2-3 medium), scrubbed or peeled and diced
  • ¼ c red onion, finely chopped
  • 2 T fresh rosemary, minced
Directions Preheat oven to 350.

Mix the oil and spices in the bowl, add the potatoes, and stir to coat.

Spread the potatoes in a single layer on the cookie sheet, and use the rubber spatula to scrape all the oil out of the bowl as you drizzle it over the potatoes. Sprinkle with onions and rosemary.

Bake for 30-40 minutes, until the potatoes are golden brown and slightly crunchy.

Serve hot!

Notes I like these home fries with a bit of fresh herb dressing, while my husband loads them up with hot sauce.
