Chocolate Mousse Ⓥ

Vegan chocolate mousse

This has to be one of the easiest and most delicious desserts that exist. Many chocolate mousse recipes call for gelatin and/or eggs; not this one!

Yield: 6 servings

Time: 10 minutes + chilling time

Tools

  • small saucepan
  • wooden spoon
  • 2 bowls
  • electric mixer with whisk attachment

Ingredients

  • 2 c cashew cream
  • ½ c  unsweetened chocolate  or  semi-sweet chocolate*
  • ¼ – ½ c agave  or  maple syrup*

Directions

Heat ⅔ c cream in saucepan over medium heat, until just about to boil.

Finely chop the chocolate and place in bowl.

Pour hot cream over chocolate, stir briefly, cover, and set aside.

Whip remaining cream and syrup in the other bowl until combined and slightly thickened.

Stir the chocolate mixture until all is melted and well incorporated, then fold in the cream.

Chill for at least 2 hours.

Notes

This is equally good served plain or with fresh strawberries.

* Sweetness:

  • Unsweetened chocolate + ½ c syrup
      or
  • Semi-sweet chocolate + ¼ c syrup
