Vegetable Juice

Vegetables are full of vitamins, and drinking vegetable juice is a wonderful way to get a big dose of them. But there’s no need to rush out and buy V-8 juice when you can make your own. Pick and choose your veggies from the list below, but for maximum benefit, it’s best to include at least five different ones.

  • Vitamix or other high-speed blender
Ingredients
  • 2 c tomato juice or water
  • 1-2 T fresh herbs (parsley, basil, rosemary…)
  • 1-2 t miso
  • 1 small clove garlic, minced (optional)

    At least 5 veggies:

  • 2 medium tomatoes
  • 1 stalk celery
  • ¼ bell pepper, any color
  • 1 small, raw beet, peeled
  • 1 carrot (peeling optional)
  • ½ medium cucumber
  • several leaves of greens (spinach, lettuce, kale…)
  • 1 green onion
Directions Wash and roughly chop the veggies, then put everything in the blender and blend until smooth. Taste and adjust seasonings.

If it’s too thick, add more tomato juice or water.

Notes If you don’t have a high-speed blender, you can use a regular blender or food processor, but you might then want to strain the juice to make it easier to drink. But don’t throw away the pulp that you strain out! Save it to make vegetable soup or add it to some marinara sauce and serve over pasta.
