Noodles and Cheese

I don’t know where this recipe comes from or if there’s a nicer name for it; all I know is that my mother used to make it when I was a kid and it only has 5 ingredients. The buttery, almost smoky onion flavor and the melty cottage cheese are absolutely delicious!

Ingredients
  • 2 c dry pasta shapes (elbows, shells, bowties)
  • 4 T butter
  • 2 c onion, sliced or roughly chopped
  • ½ t salt
  • 1 c cottage cheese, drained
Directions Cook the pasta according to package and drain.

Meanwhile, melt the butter, add the onions, and sauté over medium-high heat, stirring frequently, for 5 minutes. Add salt and continue sautéing for another 10-15 minutes, until onions are somewhat shrunken and medium- to dark-brown in color.

Stir in the pasta and cook for a minute or two, then add cottage cheese. Keep stirring – when the cottage cheese just starts to melt, it’s ready – serve immediately.

Notes This recipe works well with any flavor pasta – white, wheat, spelt, etc. It’s also great for using up leftover cooked pasta – just leave it out of the fridge for 30 minutes and add it as per the directions above.
