Directions | Preheat oven to 450. Oil the cookie sheet.
Combine onions, peppers, 2 T oil, and spices in a large bowl, then transfer to cookie sheet. Bake for about 30 minutes, stirring every 10, until tender and golden brown. When you stir the second time, wrap tortillas in foil and place in oven to warm. Meanwhile, heat remaining T oil, add the seitan, and sauté, stirring frequently, until golden – around 10 minutes. Combine vegetables, seitan, and cheese. Lay out tortillas, add filling, and roll up. Serve immediately. |
