Ingredients |
- 1 avocado, diced
- 1 large ripe tomato, diced
- ½ cucumber, seeded (optional) and diced
- ¼ c red onion, diced
- 1 c mozzarella or
feta, cubed
- several T excellent olive oil
- dash of salt

Directions |
Toss the veggies and cheese, drizzle with olive oil, sprinkle with salt, and serve immediately. |
Notes |
If you’re not going to eat the salad right away, I recommend combining everything except the avocado. You can add that at the last minute to keep it from getting mushy and turning brown. |
