Baked tofu

Marinating and baking tofu is one of the easiest, most delicious ways to enjoy this versatile food.

Yield: 2-4 servings

Time: 10 minutes hands on, plus time to press, marinate, and bake

Directions

Mix the marinade ingredients in the baking dish and add the tofu in a single layer. Swirl the dish so that the marinade coats each piece.

Every 15-20 minutes, swirl the marinade around and flip each piece of tofu so that both sides spend about equal time in the liquid.

Let marinate for at least 30 minutes, up to several hours.

Bake the tofu in the marinade at 375 for 20 minutes.

Serve with quinoa or rice drizzled with the hot marinade. It’s also great in sandwiches!

Notes

You can marinate tofu overnight and the flavor will just keep getting better. However, don’t bake it until the day you plan to eat it – the texture of baked tofu is not as nice the next day.
