Quinoa is faster, easier, and – in my opinion – tastier than rice. Give it a try!

Ingredients
- 1 c quinoa*
- 2 to 2¼ c water
- 1 t salt
Directions
Combine quinoa, 2 c water, and salt and heat to boiling.
Cover, reduce heat to medium, and simmer for about 10 minutes.
Stir and add more water if needed. Cook another 5 minutes or so, until most of the germs have separated and all the water has been absorbed.
Notes
* Do you need to rinse quinoa?
Boiled quinoa is very plain – jazz it up with some veggies to make quinoa pilaf, or spend a few extra minutes to make quinoa risotto.
