Bean-Seitan Burgers

Red beans combined with wheat gluten make a hearty and almost disturbingly meat-like burger.
Yield 4 servings
Time 45 minutes
  • whisk
  • small bowl
  • medium bowl
  • potato masher
  • wooden spoon
  • grill or frying pan
  • 1 T flax seeds, ground
  • 3 T water
  • 1 c kidney beans, soaked and cooked or canned and drained
  • 1 T olive oil
  • 1 clove garlic, minced
  • 1 T nutritional yeast
  • ⅓ c wheat gluten
  • 1 T soy sauce
Directions Whisk together the ground flax seeds and water until foamy. Set aside.

Mash the beans with the oil and garlic in the medium bowl. Stir in the nutritional yeast and flax seeds, then add the gluten and soy sauce and mix until completely combined.

Let rest for 15 minutes.

Heat the grill or frying pan over medium-high heat.

Stir the mixture again, then form into 4 burgers.

Grill or fry on each side 5 minutes.

Notes If you don’t like the rare, red meat look to these burgers, feel free to substitute another kind of bean. They’ll still taste just as good!
