|Sweet and savory plantain balls.|
Preheat oven to 400. Oil the cookie sheet.
Mash the plantain in the bowl, then stir in ham, cinnamon, and cayenne.
Combine remaining ingredients in the shallow bowl.
Take a heaping spoonful of the plantain mixture and roll into a walnut-sized ball. Roll in breadcrumbs to coat and place on cookie sheet. Repeat.
Bake 10 minute, turn, and continue baking until golden brown, another 10-15 minutes.
