|Yield||about 5 cups|
Heat the oil over low heat, add onions, garlic, and sugar, and sauté until golden brown.
Slowly add the flour, stirring constantly, and cook another few minutes until you can’t see it.
Whisk in the stock and soy sauce, bring to a boil, lower heat, and simmer for 20 minutes.
*In the book, Onion Gravy accompanies Cheese Sausages, which are made with cheddar and a bunch of eggs – I haven’t yet managed to veganize that recipe.
