Aquafaba

Glossary of Vegetarianism and Vegetarian Cuisine

(noun)  Aquafaba is the viscous liquid created by cooking beans in water. It makes a great vegan replacement for eggs, especially egg whites.

You can find aquafaba by simply opening up a can of chickpeas, or make your own by soaking and cooking chickpeas. Just make sure that there’s always an inch or so of water above the top as you’re cooking them.
