- food processor
- rubber spatula
Ingredients
- 16 oz firm silken tofu
- 1 c powdered sugar
- ¾ c smooth peanut butter
- 2 t vanilla
- ¼ c chopped peanuts (garnish)
Directions
Process the tofu until smooth.
Add sugar, peanut butter, and vanilla and process until completely incorporated. Stop and scrape down the sides of the processor two or three times, as needed.
Ladle pudding into bowls, garnish, and keep refrigerated until serving time.
