Caramelized onions and tofu make a savory vegan pie.

- large bowl
- 9-inch pie plate
- blender or food processor
Ingredients
- 1½ t oil or vegan butter
- 2½ large yellow onions, thinly sliced
- 2 cloves garlic, minced
- ½ t sugar
- ¼ t salt
- 1 vegan pie crust
- 8 oz firm or extra-firm tofu, crumbled
- ¾ c non-dairy milk
- 2½ T flour
- 1 T nutritional yeast
- black pepper
- nutmeg
Directions
Preheat oven to 350.
Heat oil over medium heat, add onions and garlic, and sauté until translucent. Add sugar and salt and continue cooking for another 15-30 minutes (longer for more caramelization). Transfer to bowl and set aside.
Meanwhile, roll out pie crust, arrange in pie plate, and bake for 10 minutes, until crust starts to color. Remove from oven and set aside.
Place milk, flour, nutritional yeast, pepper, and nutmeg in blender and process until smooth. Add to the onions and mix well.
Spread mixture into pie crust and bake for 30-45 minutes, until the top is slightly firm and the crust is golden.
Slice and serve.
